Almost every plant we service runs us 2nd or 3rd shift so the line is clean and validated before the next day's production. We staff crews across all three shifts, 7 days a week, and we'll flex to your kill schedule, holidays, and species changeovers. The only thing we ask for is enough lead time to secure chemistry and PPE for your specific zones.

Standard cycle is chlorinated alkaline foam (3–5%) for soil removal, phosphoric acid (1–2%) for scale and residue, and either a quaternary ammonium (150–400 ppm) or peracetic acid (PAA, 150–200 ppm) final sanitizer — all on the FSIS Safe & Suitable Ingredients list. We rotate alkaline and acid cycles across the week to prevent mineral buildup and resistant biofilm, and we'll swap chemistries if your plant has documented incompatibilities.

Every cycle produces a signed SSOP record: chemistry, concentration, temperature, dwell time, and the crew member who ran it. We add ATP luminometer readings at pre-op with a target of ≤ 30 RLU on food-contact surfaces, plus targeted Listeria, Salmonella, and APC swabs on a cadence keyed to your species. You get a physical binder for the plant and a monthly PDF trend report for your QA lead.

Both. For plants without an internal sanitation program, we bring a dedicated FermiPro crew — lead, techs, QA verifier — trained on your SSOPs before they ever touch a line. For plants that already have a team, we'll shoulder-to-shoulder supplement on heavy shifts or deep-clean events, and we can cross-train your staff on any protocol we write.

We design a color-coded Zone-1 through Zone-4 kit per species and per allergen — brushes, foam guns, squeegees, and PPE don't cross zones. Where a plant shares equipment between species or allergen groups, we build a documented changeover protocol with a dedicated cleaning cycle and a verification step (ATP + allergen swab) before the next species runs. FSIS Directive 7120.1 and your plant's HACCP plan both drive that logic.

Both. We work with large multi-line processors, and we also take on small-plant engagements — single-line meat shops, small poultry operations, egg handlers — where the owner is often also the QA manager. Pricing scales down cleanly for small facilities, and our SSOP + HACCP program-build engagement is frequently the best fit for a plant that's growing into a more formal food-safety posture.
