1. Scope
Applies to all food-contact surfaces on Chiller A & B, associated conveyors, and drip pans, following each production shift and prior to next pre-op inspection.
2. Cycle checklist
- Dry pickup + inspection walk
- Warm water pre-rinse — 49 °C / 120 °F
- Foam — alkaline chlorinated, 3 % · 15 min dwell
- Manual scrub — Zone-1 white kit
- Acid rinse — phosphoric 1 %, 10 min
- Sanitize — PAA 200 ppm, no-rinse
- ATP verification · target ≤ 30 RLU
